Why anonymous story viewer sites are a bad idea
Story viewer sites are not Instagram products, and Instagram's Terms of Use rule out what they depend on. The Terms say you can't access or collect information in an automated way without Instagram's express permission, and that you can't solicit, collect or use other people's login credentials.
If a site asks you to log in with Instagram or enter your password, you are handing your account to a stranger. A site that scrapes accounts can also shut down or change hands overnight, so whoever runs it next may not be who you trusted. For that reason this guide links to none of them.

What you can do instead
If you want to look at something without being seen, the honest answer is that you can't: viewing a story is visible on Instagram. If your goal is privacy for your own stories, Instagram gives you real controls.
To hide your own story from specific people, Instagram Help gives these steps for the computer version. Click More in the bottom left, click Settings, choose Story, live and location under Who can see your content, then click Hide story and live from and select the people. Hiding is different from blocking: hidden people can still see your profile and posts.
