Bold for captions: make the first line count
Long captions are cut after a couple of lines in the feed, with a "more" link. A bold first line is a simple way to make that opening stand out while people scroll.
Type the line above, copy the bold result, paste it into your caption, then write the rest in plain text. Bold also works well for structure inside a long caption: a bold label before each step, a bold price, or a bold date.

Bold text versus other Instagram fonts
This page does one thing: bold. Bold comes from the mathematical bold Unicode alphabet, which almost every phone and browser can draw, so it rarely turns into empty boxes.
If you want more choice, the Instagram font generator lists italic, script, monospace and decorative styles side by side. Those look more distinctive but break more often on older devices. For text people need to read, bold is the safest style to use.
What bold does to search and accessibility
A bold letter here is a separate character, not styled text. Instagram search looks for plain letters, so a word in bold is invisible to it. That matters most in your name field, which is searchable: write the words people search for in plain text.
Screen readers may read bold Unicode as math symbols, or skip it. A bio or caption written entirely in bold can be unreadable for a blind visitor. And if you cross-post to X, most of these letters count as 2 characters there.
